What to Eat in Ayder: Black Sea Food Explained

Muhlama, highland breakfast, trout, corn bread and tea — what the local table actually looks like.

Muhlama (kuymak)

Melted local cheese cooked with corn flour and butter, served bubbling in a copper pan and eaten with bread straight from the middle of the table. It is the signature dish of the region and appears on almost every highland breakfast.

Highland breakfast

A long table of local cheeses, butter, honeycomb, clotted cream, village bread, eggs and endless tea. It is the meal to plan a morning around, ideally at a breakfast house with a valley view above the village.

Trout from the river

Grilled or pan-fried trout with corn flour crust is the standard lunch along the Fırtına river, usually served with salad, corn bread and pickles. Riverside restaurants between Çamlıhemşin and Ayder are the classic setting.

Other things to try

Karalahana (black cabbage) soup, laz böreği for dessert, corn bread with local honey, and Rize tea served in tulip glasses through the day. In winter, hot soup after snow walking is the local habit.
